Frank’s Favorite Strawberry Cake | Shirley Dunaway Outen

When Shirley Dunaway Outen and her husband, Frank, were newly married, his parents owned a small farm west of Plant City. His mother gave Shirley his favorite cake recipe, which she made over the years. Shirley’s husband died in August 2012, shortly after their 50th wedding anniversary. The recipe holds a lot of wonderful memories for Shirley.

CAKE

INGREDIENTS

1 pint fresh Plant City strawberries

1/2 cup sugar

1 box yellow or white cake mix

1 3-ounce box strawberry gelatin desert (Jell-O)

3/4 cup cooking oil

1 cup chopped pecans

4 eggs

2 tablespoon flour

METHOD

• Hull and slice strawberries and sprinkle with sugar. Let sit while you mix remaining ingredients together well.

• Fold in strawberries and any syrup which has collected.  Pour batter into a greased and floured tube pan and bake at 350 degrees for about 45 minutes. Cake is done when it springs back from a gentle press of your finger.

• Serve plain, garnished with whipped cream or frosted with icing.

ICING

INGREDIENTS

1 box confectioners sugar

1/2 stick butter

1/2 cup sliced strawberries with juice (may not take entire cup to reach desired icing consistency)

METHOD

• Mix together with electric mixer until smooth and of correct consistency to spread on completely cooled cake.
