Strawberry Soup

This chilled, vegan soup is a great way to give any spring or summer meal a boost of antioxidants.

INGREDIENTS

1 1/2 cups cold water

1/2 cup cashews or almonds

1/2 cup frozen strawberries

1/4 cup soft dates

Pinch of sea salt (Sherry recommends Celtic sea salt)

1 tsp lemon juice

1 cup fresh strawberries, sliced (optional)

DIRECTIONS

In a VitaMix or other high-power blender, whiz nuts in 1/2 cup of water until smooth.

Add remaining water and all other ingredients.

Top with sliced strawberries for texture.

Chill and serve.
