Glazed Strawberry Tarts | Judy Wise

Judy Wise found this strawberry tart recipe handwritten in her mother’s cookbook. It’s at least from the 1960s, and Judy says it tastes wonderful and is so pretty.

INGREDIENTS

1 quart strawberries

½ cup confectioners’ sugar

1 cup water

½ to 3/4 cup granulated sugar

1 tablespoon cornstarch

Red food coloring

8 baked tart shells

Whipped cream

METHOD

• Wash and stem berries, mix 3 cups of them with confectioners’ sugar and let stand for at least 1 hour.

• Cook remaining cup of berries with water until tender and rub through a sieve. Mix granulated sugar and cornstarch, add to strained strawberry juice and cook until clear. If you want them really red add a little red food coloring.

• Arrange whole berries in tart shells and pour hot glaze over top. Cool. Garnish with whipped cream. Makes 8 tarts.
